 Ranchito Cooking Part 2

 

Now comes the fun-part, we have to put it all together, on a metal or Pyrex plate.The plate has to go in the oven, so it should be able to take the heat. We will need the following ingredients:
One bag of Tortilla Chips, 1 small can of Refried Beans, 1 small can Salsa, your choice, 1 small container of Sourcream, one Ripe Tomato, half a Head Lettuce, tasty Cheese like Sharp Cheddar, Manchego, or both.
Here is a hint: The Tortilla Chips you use, should be the more expensive kind, the ones who have a good flavor and do not taste like cardboard! We always use 'Tostitos', but you might not get them outside of Mexico. So, shop around in Mexican Stores and buy the cheese there too..
Put layers of Chips, Machaca, Salsa, Beans and grated Cheese on the plate. Bake until hot, about 10 to 15 minutes or until cheese starts to melt. (Don't use 'low fat cheese' it won't melt. Take the plate out of the oven and add Lettuce, Tomato, Sourcream and more Salsa. ENJOY!  
I recommend a few bottles of cold Mexican Beer with it, like Pacifico or Corona. On a hot SummerDay, it's good to add the juice of half lime to your beer or even tomato juice! If your'e very thirsty, add some ice to it. This way, beer goes down easy even for non-regular beer drinkers.
